Tasty and healthy, this inviting recipe belies its simple preparation. Best to soak the Golden Peony Red Rice overnight before cook it with the curry powder.

Ingredients
- 1 tube of Fortune Egg Tofu (cut into pieces)
- 250ml of broth (can be chicken or vegetable)
- 350ml of water
- 1 pack of 150g of kimchi (Include kimchi juice)
- 1 pack of mushroom (can be golden mushroom or white beech mushrooms, trimmed at the end and separated)
- 1 1/2 table spoon hot pepper paste
- 1 teaspoon of sugar
- 1 teaspoon of pepper powder
- 2 stalks of leek
Directions
- Combine kimchi, kimchi juice, sugar, hot pepper paste, broth and water in a pot.
- Bring to a boil over high heat and cook for 15-20 minutes.
- Add Fortune egg tofu and mushroom. Lower the heat to medium low. Cook for another 8-10 minutes.
- Sprinkle pepper power and add in the leek.
- Remove from heat and serve soup with either noodles or rice.
