 Serves: 4




  • 1 box FORTUNE Green Tea Tofu, cut into 6 pcs and drain
  • some potato starch
  • some egg white
  • some Golden Circle Sunflower Oil
  • Egg-flavoured White Miso
  • 100g white miso
  • 36ml mirin (Japanese sweet wine)
  • 8g sugar
  • 1 egg yolk
  • Egg-flavoured Brown Miso
  • 100g brown miso
  • 36ml mirin (Japanese Sweet Wine)
  • 8g sugar
  • 6g chilli paste
  • 1 egg yolk
  • Rice Base (mix well)
  • 100g OKOME Akitakomachi Rice, cooked
  • 15ml Japanese light soy sauce
  • 5ml Japanese sweet wine
  • 5ml Japanese rice wine
  • 2g toasted sesame seeds
  • some bonito flakes
  • 10g edamame, remove membrane and mince  



  1. Prepare Egg-flavoured White Miso: Combine white miso, mirin and sugar. Stir over low heat until sugar dissolves. Add yolk and mix well. Remove and set aside.
  2. Prepare Egg-flavoured Dark Miso: Mix brown miso, mirin, chilli paste and sugar. Stir over low heat until sugar dissolves. Add yolk and mix well. Remove and set aside.
  3. On one side of green tea tofu, coat with potato starch, followed by egg white.
  4. Divide Rice Base into 6 portions. Press each portion into same shape as tofu. Place 1 portion on every piece of tofu.
  5. Heat up sunflower oil. Pan-grill rice side until golden brown. On the tofu side, drizzle with Egg-flavoured White Miso and Egg-flavoured Dark Miso. Cover and grill till slightly charred. Serve.
